Black Walnut Carrot Cake w/Buttermilk Icing

2 cups of sugar
1 1/2 cup of Mazola oil
4 eggs
3 cups of grated carrots
1 teaspoon of cinnamon
1 teaspoon of walnut flavoring
1 teaspoon of vanilla
2 cups of self rising flour
1 cup of black walnuts


Combine sugar, oil, and eggs. Add remainder of ingredients. Bake 1 1/2 hours at 350ºF. Place cookie sheet under cake pan while in oven. Tube pan, greased and floured. 

ICING:
1/3 cup of buttermilk
1 cup of sugar
1/2 teaspoon of soda
1 teaspoon of white Karo syrup

Bring quickly to a boil and spoon over cake while still hot. Delicious!
