Cake ingredients: 2 cups of flour 2 teaspoons of baking soda 2 teaspoons of ground cinnamon 1 1/2 teaspoons of salt 2 cups of sugar 1 1/2 cups of vegetable oil 4 eggs 1 tablespoon of vanilla 3 cups of grated carrots 1 cup of chopped pitted dates 1 cup of flaked coconut 1 cup of raisins (optional) 1 cup of chopped nuts (optional)
Cream cheese frosting ingredients: 2 packages (3 ounces each) of cream cheese, softened 6 tablespoons of butter or margarine, softened 1 tablespoon of milk 1 teaspoon of vanilla 4 cups of sifted powdered sugar
To make frosting: In a mixing bowl, combine cream cheese and butter; cream with electric mixed until light and fluffy. Beat in milk and vanilla. Gradually beat in powdered sugar until of spreading consistency.
To make cake: In a medium bowl, sift together flour , baking soda, cinnamon, and salt; set aside. In a large mixing bowl, combine sugar and oil; blend well. Beat in eggs, one at a time, until well blended. Stir in vanilla. Gradually add dry ingredients; beat until well blended. Stir in carrots, dates, raisins, and nuts. Pour batter into a greased 9 X 13-inch baking pan. Bake at 350ºF. for 30 to 40 minutes or until center springs back when lightly touched. Cool on a wire rack. Frost with cream cheese frosting. Makes one 9 X 13-inch cake.
