Applesauce Chocolate Carrot Cake

4 Eggs
1 teaspoon of vanilla
1/3 cup of oil
1 cup of applesauce
2 cups of shredded carrots (about 3)
2 cups of flour
1 1/2 cups of sugar
1/4 cup of cocoa
2 teaspoons of baking soda
1 teaspoon of salt
1 teaspoon of cinnamon

From: FSelkovits@aol.com Date: Mon, 6 Nov 1995 18:49:31 GMT The recipes I've seen use applesauce to replace most but not all of the oil in a standard recipe. This is a flavorful and moist chocolate cake. Mix eggs, vanilla, oil, and applesauce together until well blended. Combine the dry ingredients and add to the egg mixture. Beat for another 2 minutes. Stir in the carrots. Pour into greased 13x9 pan. Bake at 350ºF.   for 50 minutes or until toothpick inserted in center of cake comes out clean.
