Grate the carrots, cover and set aside. Sift together the flour, soda, cinnamon and salt. In another bowl, mix together the sugar, salad oil and eggs. Add the carrots. Add the dry ingredients to the sugar mixture and mix well. Divide the batter among 3 layer cake pans that have been thoroughly greased. Bake at 350ºF. about 30 minutes or until it tests done. Cool, then place on racks. Fill and frost with Southern Carrot cake filling.
Filling:
One 8 ounce package of cream cheese
4 tablespoons of butter
1 pound of powdered sugar
1 cup of pecans or black walnuts, broken into pieces
2 teaspoons of vanilla
Cream together the butter and cream cheese. Add the sugar and mix well. Add nuts and vanilla.
