one 18.25 ounce package of yellow cake mix 4 eggs 3/4 cup of peach schnapps one 6 ounce package of instant vanilla pudding mix 1/2 cup of vegetable oil 1/2 cup of orange juice 1/2 teaspoon of orange extract 1 cup of peach schnapps 2 tablespoons of orange juice 3 cups of confectioners sugar, sifted
Preheat oven to 350ºF. Combine first 7 ingredients in mixing bowl and blend well. Pour into 10 greased and lightly floured 1 cup metal gelatin molds, filling half full. Bake 25 - 30 minutes or until cake springs back when lightly touched. Combine 1 cup peach schnapps, 2 tablespoons of orange juice, and confectioners sugar. While cakes are still warm in molds, poke holes in cakes, pour liqueur mixture over. Allow cakes to cool in molds at least 2 hours before removing. Makes 10 small cakes
