| | Kentucky Mint Julep Cake
2 1/2 cups of sifted flour 1 1/2 cups of sugar 3 teaspoons of baking powder 1 teaspoon of salt 1/2 cup of margarine, softened 1 cup of milk 1 tablespoon of crème de menthe 3 egg whites 1/2 cup of butter 1 pound of confectioners sugar 2 tablespoons of cream 1/2 teaspoon of almond flavoring
Preheat the oven to 350ºF. Sift the first 4 ingredients together in a mixing bowl, then add the margarine, 3/4 cup milk and crème de menthe. Beat until flour is moistened. Add the egg whites and remaining milk and beat until smooth. Spoon batter into 2 greased 9 inch layer pans. Bake for 25 minutes or until cake tests done. Cool. Blend the remaining ingredients together until of spreading consistency, then frost the cake. Decorate the cake with fresh mint sprigs, if desired.
