Slow Cooker  Coq Au Vin
Chicken Braised in Wine

6 bacon slices, diced
2/3 cup of sliced green onions
one 2 1/2 pound broiler fryer, cut up or 3 chicken breasts halved or 3 drumsticks and 3 thighs
8 small white onions, peeled
1/2 pound of whole mushrooms
1 clove garlic, crushed
 1 teaspoon of salt
1/4 teaspoon of pepper
1/2 teaspoon of dried thyme leaves
8 small new potatoes, scrubbed
2 cups of  Burgundy wine
1 cup of chicken broth
chopped parsley


In a large skillet, sautĂ© diced bacon and green onions until bacon s crisp. Remove and drain on paper towel. Add chicken pieces to skillet and brown well on all sides. Remove the chicken and set aside. Put peeled onions, mushrooms, and garlic in pot. add browned chicken pieces, bacon and green onions, salt, pepper, thyme, potatoes, Burgundy and chicken broth. Cover and set to LOW for 6- 8 hours. HIGH 3 - 4 hours. Serves 4 - 6
