Sweet & Sour Chicken
 
 1 carrot, cut into pieces
 1 green pepper, cut into pieces
 1 onion, quartered
 2 tablespoons of Tapioca, quick−cooking
 4 chicken breast, cut
 8 ounces of pineapple chunks in juice,
 1/3 cup of dark brown sugar, firmly packed
 1/3 cup of red wine vinegar
 1 tablespoon of soy sauce
 1 teaspoon of chicken bouillon,
 1/2 teaspoon of garlic powder
 2 tablespoons of ginger root, minced
 1 teaspoon of cilantro, dried
 fresh cilantro
 rice, hot cooked



Place vegetables in bottom of crock pot. Sprinkle tapioca over vegetables. Place chicken on top of vegetables. Combine all other ingredients except rice in a small bowl. Pour over chicken. Cover crock pot and turn to low and cook for 8−10 hours. Before serving make rice. Serve over rice. Leftovers can be reheated in microwave.
