one 4 to 5 pound pork roast Salt and pepper to taste 1/4 cup of honey 1/4 cup of soy sauce 1/2 teaspoon of dried red pepper flakes 1/4 cup of fresh lemon juice 1 tablespoon of chopped crystallized ginger 3/4 cup of crunchy peanut butter
Place a metal rack or trivet in the bottom of a slow cooker. Place meat on rack. Sprinkle with salt and pepper. In a small bowl, combine the honey, soy sauce, pepper flakes and lemon juice. Pour mixture over meat. Sprinkle ginger over meat. Cover and cook on LOW 9 to 10 hours. Remove meat and keep warm. Skin off excess fat from juices. Turn control to HIGH. Stir in peanut butter and cook about 5 minutes. Slice meat and serve with sauce. Makes 5 to 6 servings. |
