| Slow Cooker Minestrone 3 cups of water 1 1/2 pounds of stewing meat, cut into bite size pieces 1 medium onion, diced 14 1/2 ounce can of tomatoes 2 teaspoons of salt 10 ounce package of frozen mixed vegetables or your choice of frozen vegetables 1 tablespoon of dried basil 1/2 cup of dry vermicelli 1 teaspoon of dried oregano Grated Parmesan cheese
Combine all of the ingredients except the cheese in a slow cooker. Cover. Cook on LOW for 10 - 12 hours, or on HIGH 4 - 5 hours. Top the individual servings with Parmesan cheese. Makes 8 servings |
