Old Fashioned Stewed Tomatoes

4 to 5 large ripe tomatoes
2 tablespoons of margarine or butter
1 onion, thinly sliced
1/2 cup of chopped celery
1/4 cup of chopped green bell pepper
1/2 teaspoon of sugar
1 tablespoon of chopped fresh basil
1 tablespoon of chopped fresh parsley
1 bay leaf
1/2 teaspoon of salt
1/8 teaspoon of pepper
1 cup of seasoned croutons




Dip the tomatoes sin boiling water for 20 to 30 seconds. Drop into cold water and remove skins. Halve tomatoes, remove seeds and core. Coarsely chop tomatoes.
Combine tomatoes in a slow cooker with margarine or butter, onion, celery, bell pepper, sugar, basil, parsley, bay leaf, salt and pepper. Cover and cook on LOW 6 to7 hours. Remove bay leaf and discard. Top with croutons. Makes 5 or 6 servings
