Tomato Casserole

3 tablespoons of butter
2 medium onions, chopped
2 cloves garlic, minced
1/2 pound of sausage meat
1 1/2 teaspoons of salt
2 teaspoons of brown sugar
1/2 cup of dried bread crumbs
1/4 cup of water
4 teaspoons of soy sauce
1/4 cup of minced parsley
1/4 cup of butter
6 large tomatoes, thickly sliced
3/4 cup of dried bread crumbs
3 tablespoons of butter




Sauté the onions and the garlic in the three tablespoons of butter until golden brown.
Add the sausage meat, salt and brown sugar and cook over medium heat for f our minutes, stirring constantly.
Combine the half cup of bread crumbs with the water mixed with the soy sauce. Add to the onion mixture. Mix well and remove from the heat.
sprinkle on the parsley.
Spread the 1/4 cup of butter on the bourbon and sides of the crock pot.
Put a layer of tomato slices on the bottom and cover with a layer of the onion mixture. repeat until all ingredients are used up, ending with a layer of tomatoes.
Cover and cook on the low setting for six to eight hours.
Turn the tomato mixture into a baking dish and sprinkle with 3/4 cup of bread crumbs. Dot with the three tablespoons of butter.
Place under a broiler and cook until the crumbs are golden brown.
Serves 6
