Zucchini Louisiana
2 pounds of zucchini 1 green pepper, chopped 1 medium onion, chopped 1 clove garlic, minced 1 1/2 teaspoons of salt 1/2 teaspoons of black pepper 4 medium tomatoes, chopped 3 tablespoons of butter 2 1/2 tablespoons of chopped parsley |

Slice the zucchini and combine with the green pepper, onion, garlic, salt and pepper in the crock pot. Top with the chopped tomatoes and dot with the butter. Cover and cook on the HIGH setting for 2 hours. Serve sprinkled with chopped parsley. Serves 6
