1 1/2 ounces of toasted rice cereal 1/2 teaspoon of ground cinnamon 5 sugar-free caramels 2 tablespoons of smooth peanut butter 1/2 teaspoon of vanilla extract 4 wooden craft sticks 4 small apples
In a 9 inch pie plate, combine cereal and cinnamon. Microwave on High 2 minutes, stirring once; set aside.
In a small bowl, combine caramels, peanut butter, 1 tbsp. water and vanilla extract. Microwave on High 1 minute 30 seconds, or until melted and smooth, stirring once; let cool slightly. Insert craft stick into bottom of each apple.
With pastry brush, evenly coat apples with warm caramel mixture to within 1 inch of the stick. Roll apples in cereal, pressing cereal firmly onto apples. Place apples on wax paper to dry, about 15 minutes.
