Low Calorie Oat Bran Banana Cake

Vegetable cooking spray
1 1/2 cup plus 1 tablespoon of all purpose flour, divided
1 cup of pitted dates, chopped
1/3 cup of firmly packed brown sugar
1/4 cup of  margarine, softened
1 cup of  mashed ripe banana (about 2 med.)
3/4 cup of  frozen egg substitute, thawed

1 teaspoon of vanilla extract
1 1/2 cup of oat bran
2 teaspoons of  baking powder
1 teaspoon of baking soda
1 teaspoon of ground cinnamon
2 tablespoons of  chopped walnuts

Coat bottom and sides of a 13 x 9 x 2 inch baking pan with cooking spray; dust with 2 teaspoons flour, and set aside. Toss dates with 1 teaspoon flour; set aside. Cream sugar and margarine at medium speed of an electric mixer until fluffy. Add banana; beat well. Stir in egg substitute, water and vanilla. Combine 1 1/2 cups flour, oat bran, and next 3 ingredients. Add to banana mixture, beating at low speed until smooth; stir in dates. Pour batter into prepared pan; sprinkle with walnuts. Bake at 350ºF.  for 25 minutes or until a wooden pick inserted in center comes out clean. Cool completely on a wire rack.
