Low Calorie No Cholesterol Orange Pound Cake

1 3/4 cup of all purpose flour
1 cup of sugar
2 teaspoons of baking powder
1/3 cup of no cholesterol vegetable oil
2 teaspoons of grated orange rind
4 egg whites Basic-Recipes.com
1/2 cup of orange juice
 

Spray an 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan with non stick spray. In a mixing bowl sift together dry ingredients. Add oil and orange juice. Beat until smooth. Add orange rind. Beat egg whites until stiff. Fold into mixture. Pour into loaf pan and bake at 350ºF. for 60 minutes. Cool 10 minutes; then remove from pan. Cool completely on wire rack. Substitution: Use 1/2 cup pineapple juice for orange juice and 1 teaspoon vanilla for orange rind.
