Low Calorie Applesauce Cake or Cupcakes

2 cups of sifted soy flour
Sweetener = 1 cup of sugar (or cut back to taste - we like 1/3 c. equivalent)
2 teaspoons of  baking soda
2 eggs
1/4 teaspoon of ground cloves
1/4 teaspoon of nutmeg
1/2 cup of margarine
1 teaspoon of vanilla
1/2 teaspoon of allspice
1 1/2 cup of unsweetened applesauce



Heat oven to 350ºF.  Lightly grease pan, 15 1/2 x 10 1/2 x 1 inch or loaf pan or cupcake pans. Sift flour, baking soda and spices. Cream margarine, sweetener, eggs and vanilla to low speed. Beat in dry ingredients and applesauce. Bake 40 minutes to 1 hour, testing for doneness.
