1 fryer, cut in serving pieces 1 cup of cornflake crumbs 2 - 3 tablespoons of Canola oil 1 teaspoon of poultry seasoning (optional) Salt and pepper to taste
Preheat oven to 400ºF. Remove all skin from chicken pieces, rinse and pat dry thoroughly. Sprinkle with seasoning, rub with oil and roll in the crumbs. Let stand for few minutes to "set" the coating. Place in oiled pan. Do not crowd. Bake 45 minutes or more. Serves 4.
