Low Calorie Fillets in Lemon Dressing - (Low Cholesterol)

4 fillets white fish
2 tablespoons of grated onion
1 tablespoons of finely chopped celery
4 tablespoons of oil
4 slices toast, cubed
1 tablespoon  of  chopped parsley
Juice of 1 lemon
Grated rind of 1/2 lemon
1 teaspoon of salt
Pepper
Dash nutmeg


Preheat oven to 375ºF. Sauté onion and celery in oil. Mix in remaining ingredients. Place 2 fillets on the bottom of an oiled baking dish. Spread dressing over fish and top with remaining 2 fillets. Dust with paprika, dot with margarine and bake 40 minutes.
