1 1/2 to 3 pounds of orange roughy 2 onions, chopped 2 stalks celery, chopped 1 cup of chopped tomatoes or 14 ounce can of tomatoes, chopped 2 tablespoons of lemon juice or 4 tablespoons of white wine 3 cloves garlic, minced 1 bay leaf |

Simmer all ingredients except fish in an uncovered saucepan for 20 minutes. Place fish in a single layer in shallow baking dish. Pour sauce over fish. Bake uncovered at 350ºF. for 20 minutes. Remove bay leaf before serving. Serve over white or brown rice.
