| Green Beans Indian Style
1 1/2 teaspoon of vegetable oil 1 teaspoon of mustard seeds 1 pound of fresh green beans, trim and cut diagonally 1 inch pieces 2 medium carrots, peel and slice 1 small onion, chopped fine 1 teaspoon of salt (or to taste) 1 teaspoon of ground coriander 1/8 teaspoon of ground ginger 2 tablespoons of fresh lemon juice
In large non stick sauté pan, heat oil on medium high heat. Add
mustard seeds and sauté until they start to pop. Stir in beans, carrots
and onions and stir and cook 5 minutes. Stir in salt, coriander and
ginger. Reduce to low, cover and cook stirring often for 8 to 10 minutes
or until beans are tender crisp. Stir in lemon juice and serve.
