Low Calorie Fettuccine Alfredo w/Zucchini & Ricotta

2 teaspoons of olive oil
1/4 cup of dry sherry
1 cup of sliced onion
1 1/2 packed cups of grated zucchini
4 cloves garlic, minced
1/2 cup of nonfat milk
2 tablespoons of grated Parmesan cheese
1 1/2 cups of part skim ricotta cheese
4 cups of cooked fettuccine


In a skillet heat oil and sherry and sauté onion until soft but not browned. Add zucchini and garlic and cook for 5 minutes.

Combine milk and cheese. Add to sauté and cook at medium heat until thick about 10 minutes. Toss with cooked pasta and serve hot. Serves 6

Preparation time: 15 minutes
Cooking time: 8 - 10 minutes
