:Low Calorie Bacon Wrapped Pineapple

Categories: Appetizers, Low Calorie, Bacon, Pineapple Chunks

one 8 ounce can of pineapple chunks, juice packed, drained but reserving 3 tablespoons of juice
2 tablespoons of soy sauce
1/4 teaspoon of ginger
Dash of garlic powder
6 slices of bacon, each cut into thirds

Combine pineapple juice, soy sauce, ginger and garlic powder in small bowl. Add pineapple chunks and let stand 1-2 hours or overnight. Drain.

Wrap a piece of bacon around each chunk and secure with wooden toothpick. Line plate or carousel with several layers of paper toweling. Arrange appetizers around outer edge with space between. Microwave at high until bacon is slightly browned, 5 to 9 minutes.

If you do not have a carousel, place appetizers in paper towel lined baking dish; rotate and rearrange several times during coking time.
