Low Calorie Easy Turkey Chili with Beans

1 pound of  ground turkey breast
1 medium onion, chopped
one 8  ounce can of tomato paste
1 cup of  water
3 tablespoons of chili powder or to taste
1/4 teaspoon of freshly ground black pepper
2 cans of red beans, rinsed
1 cup of tomato catsup, low sodium
Vegetable cooking spray

Brown ground turkey and onion in a skillet coated with cooking spray. Mix remaining ingredients except beans together. In a 3 quart saucepan, combine turkey, onion and sauce. Simmer, covered 20 minutes. Add beans and continue cooking for 45 minutes.

Nutritional Analysis: Serving size 1 cup. 233 calories; 39 mg cholesterol; 269 mg sodium; 625 mg potassium; 2.6 gm fat, 10% calories from fat, .6 gm polyunsaturated, .6 gm saturated. Diabetic Information: 1 serving may be exchanged for 2 meats, 1 vegetable and 1 1/2 starches. Yield 8 servings.
