Low Calorie Health Spa Soup


 

Low Calorie Health Spa Soup

Categories: Low Calorie, Spinach, Zucchini, Soup

2 cloves minced garlic
1 small chopped green pepper
1 large. chopped onion
2-3 stalks of chopped celery
5 cups of  water
1/2 cup of  white wine
4 beef bouillon cubes
1 small can of Hunts tomato sauce
10 ounce package of  frozen mixed vegetables
1/2 package of  frozen spinach
1 zucchini, chopped


Sauté first four ingredients in 2 to 3 tablespoons olive oil for 5 minutes. Cook until tender. Add cooked soup, pasta and 1 can red kidney beans and 1 tablespoon Italian seasoning. Good on a rainy, cold day.
