Low Calorie Chicken Egg Sandwich

8 slices of salt free whole wheat bread
3 tablespoons of unsalted sweet margarine
4 lettuce leaves
1/2 carton of Egg Beaters (hard cooked & cut into 4 pieces, directions below)
3/4 pound of sliced, cooked chicken breast
1 medium tomato, sliced
Ground black pepper

Spread one side of bread slices with margarine. Layer lettuce leaves, Egg Beaters, chicken and tomato slices on 4 slices of whole wheat bread. Sprinkle lightly with pepper. Top with remaining bread slices. Cut into quarters and serve. To hard cook Egg Beaters: Pour into heavy 8" skillet. Cover tightly. Cook over very low heat for 10 minutes. Remove from heat. Allow to stand, covered, for 10 minutes. Makes 4 sandwiches.
