| Low Calorie Vegetarian Manwich

1 pound of tofu, drained & mashed 2 tablespoons of tamari sauce 1/4 cup of shredded cheese or 2 tbsp. yeast "cheese" 2 tablespoons of olive oil 1/2 cup of chopped onions 1/2 cup of chopped celery 1 green pepper, chopped 1 cup of catsup 2 teaspoons of vinegar 2 teaspoons of fresh lemon juice 2 teaspoons of salad mustard 1 tablespoon of honey 1/2 teaspoon of chili powder |

Sauté onions, celery and green pepper in oil until tender. Add the tamari (or soy sauce) and "cheese". Add the tofu and cook until browned and crunchy. Add a little more oil as needed.
Combine remaining ingredients in a medium saucepan. Bring these to a boil and simmer 5 minutes. Add tofu, cook another 5 minutes. Serve in burger buns. |
