Low Calorie Tabouli

1 cup of bulgur or cracked wheat #2
1 1/2 cup of boiling water
1 1/2 teaspoon of salt (optional)
1/4 cup of  lemon juice
1 clove garlic, crushed
1/4 cup of olive oil
2 tomatoes, diced
1 cup of parsley, chopped
4 green onions, chopped
 

Pour boiling water over bulgur and salt. Cover for 30 minutes. Stir in next 3 ingredients and chill for 2 hours. Add vegetables just before serving on lettuce leaves or as relish with meat or fish dishes.

HINT: Food processor is great for chopping parsley. Also could add diced cucumber, removing seeds first. If wheat is not overly soaked with hot water, it will absorb more of the lemon oil and tomato.
