Low Calorie Gourmet Dressing

1 1/4 teaspoon of unflavored gelatin
1 1/2 cup of  tomato juice
2 1/2 teaspoon of dry salad dressing mix
2 tablespoons of vinegar

Soften gelatin in 1/2 cup tomato juice; bring to a boil, stirring to dissolve gelatin. Add salad dressing mix, vinegar, and remaining tomato juice. Blend thoroughly; chill. Stir before serving. Makes 1 2/3 cups.

Calories: 1 tablespoon = 5 calories. Fat Controlled Diet: Negligible fat. Diabetic and Calorie Controlled Diet: 1 tablespoon = free choice. Sodium Controlled Diet: 1 tablespoon = 28 milligrams sodium. prepared as directed, using low sodium tomato juice, 1 tablespoon = negligible sodium.
