Baked Parsnips & Carrots

2 parsnips
4 carrots
1 tablespoon of soft margarine
salt and freshly ground pepper
a pinch if ground cumin, optional
1 tablespoon of water




Peel parsnips and carrots, cut in half crosswise, then cut lengthwise into strips. Place in baking dish and dot with margarine. Sprinkle with salt, pepper, and cumin to taste, add water. Cover and bake in 375ºF. oven for 50 to 60 minutes or until vegetables are tender.

Microwave method: Place in a microwave-safe baking dish. Cover and microwave at HIGH (100%) power for 12 - 15 minutes or until vegetables are tender. Makes 4 servings
