| | Low Cholesterol Broccoli w/Ginger & Lemon
1 1/4 pound bunch broccoli 1 tablespoon of vegetable oil or soft margarine 2 teaspoons of chopped fresh gingerroot 2 tablespoons of lemon juice freshly ground pepper
Trim broccoli stalks and cut into 1/2 inch thick pieces. Separate top into florets. In large pot of boiling water, cook the broccoli for 3 - 5 minutes or until tender crisp when pierced with knife, drain. Meanwhile in a small skillet, heat oil or margarine over medium low heat, cook gingerroot for 2 minutes. Add lemon juice. Transfer broccoli to warmed serving dish, pour lemon juice mixture over. Sprinkle with pepper to taste and mix lightly.
