| Green Hummus
1/2 pound of fresh spinach, stemmed or 2 bunches of watercress, stemmed 1/4 cup of cilantro or parsley flakes 2 cups of cooked or canned chickpeas, drained 2 tablespoons of tahini 2 small cloves of garlic or 1 large 3 tablespoons of lemon juice Cayenne pepper or Tabasco as desired
Mix all ingredients together in a food processor or blender until smooth. Refrigerate until ready to serve. Makes about 2 1/2 cups (40 tablespoons)
