| Peas with Scallions
2 tablespoons of soft margarine 1 cup of chopped scallions (white parts) or Spanish or cooking onion 3 cups of fresh or frozen peas freshly ground pepper
In a nonstick skillet, melt margarine over medium heat, add scallions and cook, stirring often, until tender, about 5 minutes. Meanwhile, blanch peas in boiling water, drain and add to skillet. Sprinkle with pepper to taste and mix gently.
