| Double Corn Biscuits
1 3/4 cups of flour 1/2 cup of cornmeal 1 tablespoon of honey 1 tablespoon of low sodium baking powder 4 tablespoons of unsalted butter 1 cup of fresh or thawed frozen corn kernels 3/4 cup of nonfat plain yogurt
In a medium bowl combine flour, cornmeal, honey, baking powder and butter. Mix thoroughly. Add corn kernels and yogurt. Knead on a floured surface 10 to 12 times. Pat into an 8 inch greased square pan and cut into 2 inch squares. Bake in a 450ºF. preheated oven for 10 - 12 minutes or until lightly brown. Makes 16 biscuits. Serve warm with honey or jam.
