| Estouffade of Beef
1/2 pound of pea beans 1 bay leaf 1/2 teaspoon of cumin 2 pounds of round steak, cut in 6 pieces 1 tablespoons of unsalted butter 2 cups of red wine 4 tomatoes, finely chopped 2 carrots, finely chopped 2 cloves garlic pepper to taste 1/2 teaspoon of thyme 1/2 teaspoon of marjoram 2 tablespoons of cornstarch
Cook beans with bay leaf and cumin according to directions on package but without salt. In a heavy pot brown beef in butter. Add wine, vegetables, garlic, and seasonings. Cover and simmer for 2 to 2 1/2 hours or until tender. You might want to add a little more wine. Place beef over beans on latter. Strain liquid into a saucepan, thicken, with cornstarch mixed with a little water, over low heat. Pour over beef. Serves 6
