| No Salt Added Orange Bread
2 eggs 1/2 cup of canola oil 4 cups of all purpose flour, sifted 1 cup of sugar 2 tablespoons of low sodium baking powder 1 teaspoon of cinnamon 1 large, organic orange, unpeeled 1 cup of buttermilk 1/2 cup of skim milk butter and flour for pans
Beat eggs until thick and lemon colored. Gradually add oil. Beat for 1 minute. Sift dry ingredients and add to egg mixture. Cut the orange into pieces and chop in blender or food processor. Add to batter. add milk slowly, continuing to beat for 2 minutes. Divide the batter between two 8x5 inch loaf pans that have been lightly buttered and floured. Let stand for 20 minutes. Bake for 20 minutes in a 400ºF. oven. Turn oven temperature to 300ºF. and continue baking for 20 minutes or until a knife inserted in the middle comes out clean. Let rest for 10 minutes before removing from the pan. Makes 2 loaves
