| No Salt Added Otto's Banana Bread
1 3/4 cups of white flour 1/2 cup of sugar 1/2 teaspoon of cinnamon 1/2 teaspoon of nutmeg 2 1/2 teaspoons of low sodium baking powder 1/4 cup of unsalted butter or margarine 2 very ripe bananas 1 egg slightly beaten 1/2 cup of chopped walnuts
Preheat oven to 350ºF. Grease and flour a 9x5 inch loaf pan. In a large bowl, use a fork to mix flour, sugar, cinnamon, nutmeg, and baking powder. With pastry blender or 2 knives cut in butter until mix resembles coarse crumbs. Stir in bananas and egg until just blended. Mix in walnuts. Spread batter evenly in pan. Bake for 45 to 55 minutes or until toothpick inserted in the center comes out clean. Cool. Makes 8 - 10 slices
