| No Salt Added Roast Leg Of Lamb
Leg of Lamb (4 to 5 pounds) 1 clove garlic, thinly sliced Juice of 1 lemon 1 teaspoon of flour freshly ground black pepper to taste
Insert thin slices of garlic under skin of lamb on each side and rub with lemon juice. Dredge with flour and season with freshly ground black pepper. Place the meat skin side down in a roasting pan. Serve with Pineapple sauce. Serves 6

Pineapple Sauce
3/4 cup of crushed canned pineapple 1/2 cup of pineapple juice 1/4 cup of sugar 1/4 teaspoon of allspice 1/4 teaspoon of prepared mustard 3/4 cup of water 2 tablespoons of fresh mint
Place the pineapple, pineapple juice, sugar, allspice, mustard and water in a saucepan and cook about 10 minutes over a slow fire until the sauce thickens. Cool and add mint. Chill before serving. Makes about 2 cups
