| Cinnamon Raisin Biscuits
1 cup of sifted all purpose flour 1 cup of whole wheat flour 1 teaspoon of cinnamon 2 packets of sugar substitute 1/4 teaspoon of salt 1/4 cup (1/2 stick) of margarine 1/2 cup of raisins 3/4 cup of low fat milk
Preheat oven to 425ºF. In a medium size bowl, sift together dry ingredients. with pastry blender or knife, cut in margarine until mixture resembles coarse oatmeal. Add raisins and stir to mix. Make a well in center of flour mixture. Pour in milk. Stir rapidly with spatula until dough is just moist enough to leave sides of bowl to form a ball. Knead dough lightly 10 - 15 times, then roll or pat out on floured surface to 1/2 inch thickness. Cut into circles with biscuit cutter. Fit close together on non-stick baking sheet. Bake 10 - 15 minutes or until golden brown. Transfer to cooling racks. Makes 1 dozen biscuits.
