2 oranges, peeled, cut into thick slices 2 tablespoons of sauterne 2 whole chicken breasts, split and skinned 1/2 teaspoon of curry 1/2 teaspoon of orange peel 1/4 cup of fresh orange juice 1 tablespoons of honey 2 teaspoons of prepared mustard 1/2 teaspoon of salt
Sprinkle orange slices with sauterne, marinade at room temperature while preparing chicken. Rub chicken on all sides with curry powder; arrange in an 8 or 9 inch square baking pan. Combine orange peel, juice, honey, mustard and salt. Pour over chicken. Cover baking pan with foil. Bake for 30 minutes. Uncover and bake 15 minutes or until chicken is tender. Drain oranges, reserving marinade. Arrange chicken and oranges on a serving platter. Spoon off excess fat from drippings. Stir in reserved marinade. Serve sauce with chicken. Makes 4 servings * Oven temp was not listed, but I usually preheat oven to 350ºF. and just watch the food as to not overcook
