Cole Slaw

1 head of cabbage
1/2 cup of diced carrots
1/2 cup of diced green pepper
1 cup of diced celery
1/3 cup of diced onion
1/2 cup of pimento
2 packets of artificial sweetener
1 cup of white vinegar
1 tablespoon of mustard powder
salt and pepper



Soak the cabbage and dry before using. Mix all vegetable ingredients in large bowl. Cabbage should be shredded very thin before adding to other ingredients. Next, pour vinegar, mustard and sweetener into small bowl and mix. Use blender if available. Then pour over Cole slaw and add salt and pepper to taste. You may add 2 tablespoons of oil or dressing for extra flavor.
