Crunchy Sweet Potato Salad

2 cups of peeled and grated uncooked sweet potatoes
1 1/4 to 1 1/2 cups of finely chopped green pepper
lettuce leaves
1 cup of finely chopped almonds or cashews
1/2 cup of diced, peeled cucumber
Lemon Yogurt, recipe below
Cucumber slices



Lemon Yogurt Mix

1 cup of plain yogurt
Lemon peel to taste
honey to taste

Combine the potato, green pepper, nuts and diced cucumber in large bowl. Toss lightly. Add 3 tablespoons of lemon yogurt, stirring to blend well. Arrange lettuce leaves on platter. Mound salad in center. Garnish with cucumber slices. Serve with additional Lemon yogurt.
