Coffee Ice Cream

1/2 cup of honey
2 tablespoons of whole wheat flour
1/8 teaspoon of salt
2 cups of milk
2 eggs
3 tablespoons of instant coffee powder
2 cups of light cream
1 1/2 teaspoon of vanilla



In a saucepan, combine honey, flour, and salt, Mix well, then add milk. Cook and stir over low heat until mix begins to thicken. Add eggs slowly, cooking and stirring for 1 minute longer. Dissolve coffee in 1/4 cup of light cream; add to hot mix. Stir in remaining cream and vanilla. Pour mix into cream can of ice cream freezer; chill in refrigerator for 1 hour, then process. Transfer to deep freeze for hardening. Makes 8 servings
