Poppy Seed Cake

1 1/2 cup of honey
3/4 cup of butter
1 teaspoon of vanilla
4 eggs
1 1/2 cup of whole wheat flour
1/3 cup of poppy seed
2 1/2 teaspoons of baking soda
1/2 cup of buttermilk
1 medium banana, mashed
1/2 cup of raisins
frosting


In a large bowl, beat honey, butter and vanilla. Beat in eggs, one at a time. In second bowl, mix flour, poppy seeds, and baking soda. In third bowl, mix buttermilk and banana. Alternately add second and third bowls to the first, mixing well. Add raisins to batter. Pour batter into a greased and floured 10 inch tube pan. Bake at 350ºF. for 50 minutes or until knife inserted comes out clean. Cool and ice.

Frosting
1/4 cup of honey
3 ounces of cream cheese
2 tablespoons of butter
1 teaspoon of vanilla
1 cup of instant nonfat milk powder
almonds

Combine honey, cream cheese, butter and vanilla. Beat in milk powder. Use this mix as frosting and garnish with almonds
