Sugar Free Cranberry Cake

1/4 cup of butter
1/3 cup of honey
1 tablespoon of grated orange peel
1/2 teaspoon of vanilla
1 1/2 cup of cranberries
2 tablespoons of honey
2 tablespoons of orange juice
1 cup plus 1 tablespoon of whole wheat flour
1 teaspoon of baking soda
1/2 teaspoon of salt
1/3 cup of honey
1/4 cup of oil
1/2 cup of buttermilk
1 tablespoon  of grated orange peel
1 teaspoon of vanilla
1 egg


Grease an 8x8  inch pan and line with parchment paper. Cream butter with honey. Blend in 1 tablespoon of orange peel and 1/2 teaspoon of vanilla. Spread in prepared pan. Coarsely chop cranberries and mix with 2 tablespoons of honey and orange juice. Spread over mix in pan. Mix flour, soda, and salt. Mix honey, oil, buttermilk, orange peel and vanilla. Add to flour mix. Mix well and add egg. When completely blended, pour over cranberries in pan. Bake in 350ºF. oven for 30 minutes. Remove from pan immediately. Peel off parchment. Makes 6- 8 servings.
