Sugar Free Date Caramel Cream

1 3/4 cup of milk
1/2 cup of sliced dates
1/3 cup of cornstarch
1/4 cup of cold milk
1/4 teaspoon of salt
1 egg, slightly beaten
2 tablespoons of honey
1/4 cup of chopped nuts
1/2 teaspoon of vanilla


In top of double boiler, scald milk and add dates. Mix cornstarch, cold milk and salt. Add to hot milk and cook over simmering water until thickened, stirring constantly. Cover and continue to cook for 10 minutes. Mix eggs and honey and add to hot mix. Cook 1 minute longer. Remove from heat, add nuts and vanilla, and pour into individual serving dishes. Chill. Makes 4 - 6 servings
