Sandwich Cookies

1/2 cup of butter
1/2 cup of honey, warmed
1 egg
1 tablespoon of buttermilk
1 teaspoon of vanilla
2 cups of whole wheat pastry flour
1/2 teaspoon of baking soda
Fruit Filling

Cream butter, honey, egg, buttermilk and vanilla. Mix flour and soda and add to creamed mixture, combining thoroughly. Chill dough several hours. Drop dough by teaspoonfuls about 2 inches apart, onto a buttered baking sheet. Flatten each with a glass bottom covered by damp cloth. Bake at 350ºF. for 8 - 10 minutes. Spread filling on half the cookies and cover with another cookie. Use about 1 teaspoon of filling for each cookie.


Fruit Filling
3/4 cup of diced, dried fruit
1/3 cup of honey
1/2 cup of water

Cook fruit, honey, and water in heavy saucepan over low heat for 30 minutes. Cool slightly, then process in blender until smooth. If necessary, add teaspoon or 2 of water to aid spreading consistency.
