| | Elegantly Scalloped Potatoes
Boil, in their skins, 6 medium potatoes. Cool, peel and cut into julienne strips. In a saucepan, over low heat combine:
2 cups of shredded Cheddar cheese 1/4 cup of butter
Stir occasionally until almost melted. Remove from heat and blend in:
1 1/4 cup of sour cream 1/3 cup of chopped green onion 1 teaspoon of salt 1/4 teaspoon of pepper
Fold in potatoes and turn into greased 2 quart casserole. Refrigerate. To serve, return to room temperature and bake 25 minutes at 450ºF. or until heated through. Serves 8 |
