2 teaspoons of Dijon mustard 1 1/4 cup of olive oil 1/2 cup of lemon juice 1/4 teaspoon of pepper 40 ounces of canned chick peas 1 medium red onion, cut in rings 1/4 pound of Feta cheese, crumbled 2 tablespoons of chopped parsley
Combine the mustard, oil, lemon juice, and pepper to make dressing. Combine chick peas and onion in a large bowl. Pour on dressing, toss, and refrigerate for at least 1 hour. At serving time, add cheese and parsley and toss again.
