Hungarian Flauf

2 tablespoons of minced shallot
1 1/2 cup of minced ham
3 tablespoons of butter
1/4 cup of Madeira wine
3 eggs
1 cup of sour cream
1/4 cup of bread crumbs
1/4 cup of grated jarlsberg cheese
2 teaspoons of caraway seeds
1/4 teaspoon of cream of tartar



In a skillet, sauté shallot, ham, and butter. Add Madeira, and while stirring, evaporate Madeira over high heat. Remove from heat and cool. Separate eggs and beat the yolks until thick. Stir in sour cream, bread crumbs, Jarlsberg cheese and caraway seeds/ Stir in the ham mix. In separate bowl, beat egg whites until foamy. Add cream of tartar and beat until stiff. Fold in ham mix. Place all in buttered 9 inch quiche pan. Bake at 400ºF. for 30 - 35 minutes, until puffed and lightly browned.
